Description

A classic Spanish dessert featuring a creamy custard with a crispy caramelized sugar top, often flavored with citrus and cinnamon.


Ingredients

Scale
  • 2 cups milk
  • Zest from 1 lemon or orange
  • 1 cinnamon stick
  • 4 egg yolks
  • 3/4 cup sugar
  • 2 tablespoons cornstarch

Instructions

  1. Heat the milk with citrus zest and cinnamon stick over low heat, being careful not to let it boil (about 5 minutes).
  2. In a separate bowl, whisk together the egg yolks and sugar until pale and fluffy (2 minutes).
  3. Add the cornstarch to the egg mixture and mix well.
  4. Slowly add the hot milk to the egg mixture while whisking continuously to prevent scrambling (about 5-8 minutes).
  5. Return the mixture to the pot and cook gently until it thickens to a heavy cream consistency, whisking constantly.
  6. Pass the mixture through a sieve into ramekins and chill in the refrigerator for at least 2 hours.
  7. Right before serving, sprinkle sugar on top of each custard and torch until caramelized.

Notes

Use fresh citrus for better flavor and chill the custard properly for the best texture. A kitchen torch gives the best results for the caramel top.
