- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup blackberry jam
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a mixing bowl, combine the flour, black cocoa, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
- Mix the wet ingredients into the dry ingredients until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool completely in the pans before removing.
- Once cooled, layer and fill the cakes with blackberry jam as desired.
- Decorate with your choice of frosting.
Notes
For best results, let the cake cool completely before frosting. Use parchment paper in your baking pans to prevent sticking.
