  • 1/2 cup milk (or non-dairy milk)
  • For the Streusel Topping:
  • 3/4 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, chilled and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside. In a large mixing bowl, cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract and apple butter. Alternate adding dry ingredients and milk, mixing until just combined.
  3. In a small bowl, combine flour, granulated sugar, brown sugar, cinnamon, and salt. Add chilled butter cubes and mix until the mixture resembles coarse crumbs.
  4. Scoop muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping evenly over the batter.
  5. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean. The tops should be golden brown and the streusel should have a crispy crust. Allow muffins to cool slightly in the tin before transferring to a wire rack.

  • For Extra Flavor: Add a sprinkle of cinnamon or powdered sugar on top of the muffins after baking.
