- For the Streusel Topping:
- 3/4 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/3 cup unsalted butter, chilled and cut into small cubes
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside. In a large mixing bowl, cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract and apple butter. Alternate adding dry ingredients and milk, mixing until just combined.
- In a small bowl, combine flour, granulated sugar, brown sugar, cinnamon, and salt. Add chilled butter cubes and mix until the mixture resembles coarse crumbs.
- Scoop muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping evenly over the batter.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean. The tops should be golden brown and the streusel should have a crispy crust. Allow muffins to cool slightly in the tin before transferring to a wire rack.
Notes
- For Extra Flavor: Add a sprinkle of cinnamon or powdered sugar on top of the muffins after baking.
