Description

A savory and moist chicken meatloaf infused with garlic and Parmesan cheese, baked to perfection for a comforting and healthier dinner. This easy recipe delivers tender slices packed with flavor, perfect for family meals.

Ingredients

Scale
  • 1½ pounds ground chicken
  • ¾ cup breadcrumbs (Italian-style preferred)
  • ½ cup freshly grated Parmesan cheese
  • ½ cup milk
  • 2 large eggs
  • 4 garlic cloves, minced
  • 1 small onion, finely diced
  • 2 tablespoon chopped fresh parsley (or 2 teaspoon dried)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon olive oil
  • ¼ cup ketchup (plus extra for topping, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a loaf pan (9×5-inch) with parchment paper or lightly grease with oil.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic. Sauté for 2-3 minutes until soft and fragrant, then let cool slightly.
  3. In a large bowl, combine ground chicken, sautéed onion and garlic, breadcrumbs, Parmesan, milk, eggs, parsley, salt, pepper, Italian seasoning, and ketchup. Mix just until combined.
  4. Transfer the mixture into the prepared loaf pan and gently press it in evenly. Spread a thin layer of ketchup over the loaf if desired.
  5. Bake in the center of the oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • Resting time is crucial for a juicy and sliceable meatloaf.
  • Use fresh Parmesan cheese for the best flavor and texture.
  • For crispier edges, shape the meatloaf freely on a lined baking sheet instead of using a loaf pan.
  • Variations include adding spinach and feta, or using BBQ sauce instead of ketchup for a different flavor profile.
  • For a gluten-free option, use gluten-free breadcrumbs or rolled oats.
