  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 8 slices beef bacon
  • 4 slices sharp cheddar cheese
  • 4 yellow onions or sweet onions (like Vidalia)
  • 4 burger buns (brioche or potato rolls recommended)
  • Fresh lettuce (romaine or butter lettuce)
  • Ripe tomato slices
  • Crunchy pickles
  • Ketchup
  • Mustard
  • Mayonnaise
  • Salt
  • Black pepper
  • 12 tablespoons unsalted butter or neutral oil (like canola or vegetable oil)
  • Vegetable broth or balsamic vinegar (optional for caramelizing onions)

Instructions

  1. Peel and thinly slice the yellow or Vidalia onions to about 1/8-inch thick.
  2. Heat a large, heavy-bottomed skillet or Dutch oven over medium-low heat. Add 1-2 tablespoons of unsalted butter or a neutral oil. Once melted, add the sliced onions and a generous pinch of salt.
  3. Stir the onions frequently. For the first 10-15 minutes, they will release their moisture and become translucent. Continue cooking, stirring every 5-10 minutes, for a total of 45-60 minutes until they are a rich, deep brown and incredibly sweet.
  4. If the pan gets too dry, add a tablespoon or two of vegetable broth or a tiny splash of balsamic vinegar to deglaze the pan.
  5. In the same skillet or a separate one, heat over medium heat to cook the beef bacon. Lay the beef bacon strips in a single layer and cook for 3-5 minutes per side until crispy. Transfer to a plate lined with paper towels to drain excess fat.
  6. Gently divide the ground beef into four equal portions and form each portion into a patty, about ¾-inch thick. Make a small indentation in the center of each patty with your thumb.
  7. Generously season both sides of the patties with salt and freshly ground black pepper.
  8. Heat a clean skillet or grill over medium-high heat. If not using bacon fat, add a little oil. Once hot, place the patties in the skillet and cook for 3-5 minutes per side for medium-rare to medium.
  9. During the last minute or two of cooking, place a slice of cheese on each patty and cover the skillet with a lid to help the cheese melt.
  10. While the cheese melts, lightly butter the cut sides of the burger buns and toast them cut-side down in a clean section of the hot skillet for 1-2 minutes until golden brown.
  11. On the bottom half of each toasted bun, spread your preferred condiments. Layer with fresh lettuce and a slice of tomato if desired.
  12. Place a cheesy burger patty on top, then crown the patty with a couple of slices of crispy beef bacon.
  13. Generously spoon the caramelized onions over the bacon, then top with the other half of the bun and serve immediately.
