Description
A delicious banana bread that combines ripe bananas, creamy peanut butter, and chunks of Reese’s cups for a rich and indulgent treat.
Ingredients
Scale
- 3 medium-sized ripe bananas
- ½ cup creamy peanut butter
- ¼ cup unsalted butter, melted
- 2 large eggs, room temperature
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup Reese’s Peanut Butter Cups, roughly chopped
- ¼ cup chocolate chips (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- Mash the ripe bananas in a large bowl until smooth with small chunks remaining. Add the peanut butter and melted butter, mixing well.
- Whisk in eggs, brown sugar, granulated sugar, and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Fold in ¾ cup of chopped Reese’s Peanut Butter Cups, saving ¼ cup for topping.
- Pour the batter into the prepared loaf pan and sprinkle the remaining Reese’s cups and chocolate chips on top.
- Bake for 55-60 minutes, or until a toothpick comes out with a few moist crumbs.
- Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
Notes
For a healthier version, substitute half the all-purpose flour with whole wheat flour. For gluten-free, use a 1:1 gluten-free baking flour blend.
