Description

A delicious banana bread that combines ripe bananas, creamy peanut butter, and chunks of Reese’s cups for a rich and indulgent treat.


Ingredients

  • 3 medium-sized ripe bananas
  • ½ cup creamy peanut butter
  • ¼ cup unsalted butter, melted
  • 2 large eggs, room temperature
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup Reese’s Peanut Butter Cups, roughly chopped
  • ¼ cup chocolate chips (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth with small chunks remaining. Add the peanut butter and melted butter, mixing well.
  3. Whisk in eggs, brown sugar, granulated sugar, and vanilla extract until smooth.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Fold in ¾ cup of chopped Reese’s Peanut Butter Cups, saving ¼ cup for topping.
  7. Pour the batter into the prepared loaf pan and sprinkle the remaining Reese’s cups and chocolate chips on top.
  8. Bake for 55-60 minutes, or until a toothpick comes out with a few moist crumbs.
  9. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Notes

For a healthier version, substitute half the all-purpose flour with whole wheat flour. For gluten-free, use a 1:1 gluten-free baking flour blend.
