Description

Decadent cookies with a creamy Biscoff center that melts in your mouth.


Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ cup Biscoff spread

Instructions

  1. Freeze blobs of Biscoff spread on a plate for 30 minutes.
  2. Cream together butter and brown sugar until fluffy.
  3. Mix in the egg and vanilla until combined.
  4. Add flour and baking soda; mix until you have soft but not sticky dough.
  5. Wrap cookie dough around frozen Biscoff blobs, pinching edges to seal.
  6. Place on a lined baking tray and bake at 350°F (175°C) for 10-12 minutes.
  7. Let cool for a couple of minutes before enjoying.

Notes

For a gluten-free option, swap all-purpose flour for a gluten-free blend. Use vegan butter and check your Biscoff for dairy-free options.
