- 1 lb flank steak
- Marinade:
- 2 teaspoons soy sauce
- 2 teaspoons Shaoxing wine
- 2 teaspoons cornstarch
- 1/2 teaspoon baking soda
- Sauce:
- 1/2 cup chicken broth
- 2 tablespoons Shaoxing wine
- 2 tablespoons soy sauce
- 1 teaspoon dark soy sauce
- 1 tablespoon cornstarch
- 2 teaspoons coarsely ground black pepper
- 1 teaspoon sugar
- 1/8 teaspoon salt (optional)
- Stir fry:
- 2 tablespoons peanut oil
- 2 teaspoons ginger, minced
- 2 cloves garlic, minced
- 1/2 yellow onion, sliced
- 2 bell peppers, sliced
Instructions
- Cut the flank steak against the grain into 1/8-inch thick slices.
- In a bowl, combine steak with marinade ingredients: soy sauce, Shaoxing wine, baking soda, and cornstarch. Mix well and marinate for 15 minutes.
- In a separate bowl, whisk together all sauce ingredients. Set aside.
- Heat 1 tablespoon of oil in a skillet over medium-high heat. Add steak and sear for 1-2 minutes per side until browned. Remove steak from skillet and set aside.
- Add remaining oil to the skillet over medium heat. Add ginger and garlic, stir until fragrant.
- Add onion and peppers, stir-fry for 1 minute.
- Stir the sauce mixture until smooth, then pour into the skillet. Cook until the sauce thickens, about 30 seconds.
- Add the cooked steak back to the skillet. Stir quickly to coat everything with the sauce.
- Turn off heat and transfer immediately to a serving plate. Serve hot.
Notes
- For a gluten-free dish, use tamari instead of soy sauce and dry sherry instead of Shaoxing wine.
- Chicken stock can be substituted with beef stock for a beefier flavor.
- Vegetables can be cut on the bias into shorter pieces for a different texture.
