  • 100 grams Egg Whites (aged and at room temperature)
  • 100 grams Granulated Sugar (to stabilize meringue)
  • 1 cup Blackberry Preserves (or substitute with other fruit jams or chocolate ganache)
  • 50 grams Butter (unsalted, softened; not suitable for dairy-free alternatives)

Instructions

  1. Measure and sift almond flour and powdered sugar together twice to ensure a fine, lump-free mixture, then set aside.
  2. Whip the egg whites until soft peaks form. Gradually add the granulated sugar and continue whipping until stiff, glossy peaks are achieved for a stable meringue.
  3. Gently fold the sifted almond flour and powdered sugar mixture into the meringue using a spatula. Continue folding until the batter flows smoothly in a thick ribbon when lifted.
  4. Transfer the batter to a piping bag fitted with a round tip. Pipe uniform 1.5-inch circles onto a lined baking sheet, then tap the sheet firmly on the counter to release any trapped air bubbles.
  5. Let the piped macarons sit at room temperature for 30 to 60 minutes until they form a firm, non-sticky skin when touched; this helps develop the signature macaron feet.
  6. Preheat the oven to 300°F (150°C). Bake the macarons for 12 to 15 minutes until they develop feet and do not stick to the parchment when lifted.
  7. Allow the macarons to cool completely on the baking sheet. Meanwhile, prepare the filling by softening the butter and mixing it with blackberry preserves until smooth. Pipe the filling onto one shell and sandwich it with another. Refrigerate for at least 24 hours to mature flavors before serving.
