Ingredients

Scale
  • 3 whole eggs
  • 1.5 cups whole milk
  • 0.5 teaspoon vanilla extract
  • 1.5 cups flour
  • 1 teaspoon coarse salt
  • 0.5 cups sugar, divided
  • 1 cup blackberries
  • Cooking Spray
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 450°F on the lowest rack with the popover pan inside.
  2. Combine eggs, whole milk, and vanilla extract in a stand mixer or large bowl and whisk until frothy.
  3. Incorporate flour, salt, and 1/4 cup sugar into the egg mixture and mix until smooth with small lumps remaining.
  4. Fold blackberries and any leftover sugar into the batter gently.
  5. Spray the hot popover pan with cooking spray generously.
  6. Pour the batter into the cups, filling them three-quarters full.
  7. Bake for 12 minutes at 450°F, then reduce to 350°F for 20 minutes until golden brown.
  8. Poke small holes in the bottoms of popovers as soon as they come out to release steam.
  9. Brush the tops with melted butter and roll in remaining sugar.
  10. Serve immediately while warm.
