  • 2 lbs kielbasa sausage, cut into ½-inch chunks
  • 2 medium zucchinis, cut into ½-inch chunks
  • 1 red bell pepper, cut into ½-inch chunks
  • ½ cup Italian dressing

Instructions

  1. In a large bowl, combine the thinly sliced potatoes, chopped onion, minced garlic, salt, pepper, paprika, parsley, and oil. Toss well until evenly coated. In a second bowl, combine the kielbasa sausage chunks, zucchini, red bell pepper, and Italian dressing. Let both mixtures sit while the griddle preheats.
  2. Preheat your Blackstone griddle to medium-high heat for about 5 minutes. Drizzle a little extra oil across the hot surface.
  3. Spread the potato mixture onto the griddle in a mostly single layer. Cook undisturbed for 5 minutes to form a crispy crust. Flip or toss and cook for another 5 minutes, until the potatoes begin to brown and become tender.
  4. Add the sausage and vegetable mixture to the griddle and combine it with the potatoes. Spread everything out again in a mostly single layer. Cook for 5 minutes, then flip and cook for another 5 minutes, until the sausage is browned and the vegetables are tender.
  5. Remove the stir fry from the griddle. Let it rest for 2-3 minutes before serving to allow the juices to redistribute. Serve hot, optionally with toppings like hot sauce, a fried egg, or cheese.
