- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted

- 16 oz cream cheese, softened

Instructions
- Preheat the oven to 325°F (160°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- In a mixing bowl, combine 1 ½ cups of graham cracker crumbs with ½ cup of melted unsalted butter and ¼ cup of granulated sugar. Mix until well combined. Press this mixture firmly into the bottom of your prepared pan.
- Bake the crust for about 10 minutes, or until lightly golden. Remove from the oven and allow it to cool slightly.
- In a large bowl, beat 16 oz of cream cheese with ½ cup of granulated sugar and 1 tsp of vanilla extract until smooth and creamy. Add 2 large eggs, one at a time, mixing well after each addition.
- Peel, core, and dice 2 cups of apples and toss them with 1 tsp of cinnamon. Gently fold the apples into the cheesecake mixture.
- Pour the cheesecake mixture over the pre-baked crust, smoothing it out evenly with a spatula.
- Bake the bars for 25-30 minutes, or until the center is set and slightly jiggles. Be careful not to overbake, as this will lead to cracks.
- Cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 4 hours or overnight for the best flavor and texture.
- Before serving, warm your caramel sauce slightly and drizzle it generously over the chilled cheesecake bars.
- Use a sharp knife to cut the bars into squares. Optionally, garnish with extra apple slices or whipped cream.
