Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled, cored, and diced (about 2 medium apples)
  • 1 tsp cinnamon
  • Caramel sauce, for drizzling

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a mixing bowl, combine 1 ½ cups of graham cracker crumbs with ½ cup of melted unsalted butter and ¼ cup of granulated sugar. Mix until well combined. Press this mixture firmly into the bottom of your prepared pan.
  3. Bake the crust for about 10 minutes, or until lightly golden. Remove from the oven and allow it to cool slightly.
  4. In a large bowl, beat 16 oz of cream cheese with ½ cup of granulated sugar and 1 tsp of vanilla extract until smooth and creamy. Add 2 large eggs, one at a time, mixing well after each addition.
  5. Peel, core, and dice 2 cups of apples and toss them with 1 tsp of cinnamon. Gently fold the apples into the cheesecake mixture.
  6. Pour the cheesecake mixture over the pre-baked crust, smoothing it out evenly with a spatula.
  7. Bake the bars for 25-30 minutes, or until the center is set and slightly jiggles. Be careful not to overbake, as this will lead to cracks.
  8. Cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 4 hours or overnight for the best flavor and texture.
  9. Before serving, warm your caramel sauce slightly and drizzle it generously over the chilled cheesecake bars.
  10. Use a sharp knife to cut the bars into squares. Optionally, garnish with extra apple slices or whipped cream.
