Instructions
- Brown the ground beef in a large skillet over medium heat until fully cooked. Drain excess fat. Season with onion powder, garlic powder, paprika, salt, and pepper.
- Reduce heat to low. Stir in the enchilada sauce and sour cream until a creamy sauce forms.
- Add the cheese tortellini to the skillet. If using frozen tortellini, cook according to package directions first, then drain before adding. Stir to coat the tortellini evenly with the sauce.
- Sprinkle the shredded Mexican cheese blend over the top of the tortellini mixture.
- Cover the skillet and cook on low heat for 5–7 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro, green onions, or crushed tortilla chips, and serve hot directly from the skillet.
