Description

A hearty and comforting Cheesy Beef Potato Soup, perfect for chilly days. This easy recipe combines tender ground beef, creamy potatoes, and a rich cheddar cheese sauce for a satisfying meal that can be prepared in about 30 minutes.

Ingredients

Scale
  • 1 pound Ground Beef
  • 1 medium Yellow Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Beef Broth
  • 4 medium Yukon Gold Potatoes, diced
  • 1 teaspoon Paprika
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 2 cups Mild Cheddar Cheese, shredded
  • 1 cup Heavy Whipping Cream
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Parsley, chopped (for garnish)

Instructions

  1. Brown the ground beef and diced yellow onion in a large pot over medium heat for 8-10 minutes until fully cooked. Drain excess grease.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the beef broth, diced Yukon Gold potatoes, paprika, kosher salt, and black pepper. Bring to a boil.
  4. Lower the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  5. Gradually mix in the shredded mild cheddar cheese, stirring continuously until melted and creamy.
  6. Add the heavy whipping cream and heat through for another 3-5 minutes.
  7. Prepare a cornstarch slurry by mixing cornstarch with water, then stir this mixture into the soup. Simmer for 2-3 minutes until thickened.
  8. Ladle the Cheesy Beef Potato Soup into bowls and garnish with chopped parsley and extra cheddar cheese.

Notes

  • For a spicy twist, add red pepper flakes.
  • Store leftovers in an airtight container for up to 3-4 days.
  • Freeze for up to 3 months, omitting cheese and cream, and adding them back when reheating.
  • If the soup is too thick, add more beef broth or water while reheating.
  • Use freshly shredded cheese for better melting and creaminess.
  • Taste and adjust seasonings as needed.
  • Consider adding other vegetables like carrots or peas for extra nutrition and color.
