- 2 pounds baby potatoes, quartered
- 14 oz smoked sausage, sliced into rounds
- 1 packet ranch seasoning mix
- 2 cups shredded cheddar cheese
- 2 tablespoons olive oil
- 1/2 cup sour cream (optional for serving)
- 2 green onions, sliced (for garnish)
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Lightly grease a large baking dish or sheet pan.
- In a large mixing bowl, toss the quartered potatoes with olive oil, ranch seasoning, salt, and black pepper until evenly coated.
- Spread the potatoes in the prepared baking dish and roast for 20 minutes.
- Remove from the oven, stir in the sliced smoked sausage, and return to roast for another 20 minutes or until potatoes are fork-tender and lightly golden.
- Sprinkle shredded cheddar cheese evenly over the potatoes and sausage, then bake for an additional 5–7 minutes until the cheese is melted and bubbly.
- Garnish with sliced green onions and serve warm with sour cream if desired.
Notes
- Baby potatoes or red potatoes work best for this recipe.
- Freshly shredded cheese melts better than pre-shredded cheese.
- Taste before adding extra salt, as sausage and ranch seasoning are already salty.
- Leftovers can be stored in the refrigerator for up to 4 days and reheated in the oven.
