- 1.5 pounds chicken, cut into pieces
- 3 tablespoons vegetable oil
- 2 medium onions, finely chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, slit (adjust to taste)
- 2 tomatoes, pureed
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt, to taste
- Fresh cilantro, for garnish
- 1/2 cup water (as needed)
Instructions
- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onions and sauté until golden brown.
- Stir in the minced garlic and grated ginger, cooking for 2-3 minutes until fragrant.
- Add cumin seeds, coriander powder, turmeric powder, and red chili powder. Cook for another 2-3 minutes, stirring continuously.
- Toss in the chicken pieces, ensuring they are well coated with the spices. Cook until the chicken is browned on all sides.
- Pour in the pureed tomatoes and mix well. Cook for about 5 minutes until the mixture thickens.
- Add water as needed to create a sauce. Reduce the heat and let it simmer for 20-25 minutes, stirring occasionally.
- Once the chicken is cooked through, sprinkle with garam masala and adjust salt to taste. Stir and cook for an additional 5 minutes.
- Remove from heat and garnish with fresh cilantro before serving.
