  • 1 small yellow onion, diced
  • 2 large carrots, diced
  • 2 ribs celery, diced
  • 1 tablespoon minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 32 oz chicken broth
  • 1 pint heavy cream
  • 2 tablespoons dijon mustard
  • 4 cups cooked and cubed chicken
  • 8 oz cubed ham
  • 8 oz cream cheese, cubed and softened to room temperature
  • Swiss cheese, shredded
  • Homemade croutons

Instructions

  1. In a large stockpot over medium heat, melt the butter.
  2. Add diced onion, carrots, celery, minced garlic, paprika, salt, and pepper. Cook, stirring regularly, until the carrots have softened, about 10 minutes.
  3. Pour in the chicken broth, heavy cream, and dijon mustard. Stir in the cooked and cubed chicken, ham, and cream cheese. Cook until the soup is hot and the cream cheese has melted, about 10 minutes.
  4. Taste your soup. Re-season with salt and pepper if necessary.
  5. Top each bowl with shredded Swiss cheese and homemade croutons. Serve warm.
