- 1 whole Rotisserie Chicken (or cooked chicken breasts for a healthier option)
- 2 tablespoons Unsalted Butter (use salted if unsalted isn’t available)
- 1 tablespoon Oil (any neutral oil can be substituted)
- 1 medium Onion (substitute with shallots or leeks for milder taste)
- 2 cups Baby Carrots (can substitute with regular carrots, diced)
- 1/4 cup All-Purpose Flour (use gluten-free flour mix for gluten-free option)
- 8 cups Chicken Bouillon + Water or Chicken Broth (store-bought chicken broth can be used directly, omitting bouillon)

- 1 tablespoon Italian Seasoning (can substitute with dried thyme or oregano)
- 1 cup Whole Milk (or skim milk/non-dairy alternative if preferred)
- 2 cups Self-Rising Flour (use all-purpose flour plus baking powder if self-rising isn’t available)
Instructions
- Dice one medium onion and cut baby carrots into thirds, placing them in a bowl for easy access.
- Take your rotisserie chicken and remove the skin, then cut it into bite-sized pieces.
- In a large pot, combine 8 cups of water with chicken bouillon. Bring this mixture to a boil.
- Heat a Dutch oven over medium heat and add a tablespoon of oil and two tablespoons of unsalted butter. Toss in the diced onion and cut carrots, sautéing for about 5 minutes.
- Sprinkle 1/4 cup of all-purpose flour over the sautéed vegetables. Stir constantly for about 1 minute, then pour in the prepared chicken broth.
- Add bite-sized rotisserie chicken to the thickened broth along with salt, black pepper, and Italian seasoning. Pour in 1/2 cup of whole milk and let it simmer.
- In a separate bowl, combine 2 cups of self-rising flour with 1/4 cup of melted butter and 1 cup of milk. Stir until just combined.
- Drop spoonfuls of the dumpling batter into the simmering broth, cover the Dutch oven tightly, and cook for 15-20 minutes.
- After the dumplings have cooked, use a toothpick to gently poke one to check for doneness.
- Once everything is ready, allow the dish to cool slightly before serving.
