  • 1 lb juicy chicken breast (diced or shredded)
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup half-and-half (for creaminess)
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (for thickening)
  • 2 cloves garlic, minced
  • 1 bay leaf
  • For the Dumplings: 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add diced chicken and cook until browned. Remove chicken and set aside. In the same pot, sauté onions, carrots, and celery until softened (5–7 minutes).
  2. Add minced garlic and cook for 1 minute. Sprinkle flour over vegetables, stirring well to coat.
  3. Pour in chicken broth, half-and-half, thyme, salt, and pepper. Bring to a simmer and cook for 10-15 minutes until vegetables are tender.
  4. In a medium bowl, combine flour, baking powder, salt, and garlic powder. Stir in milk and melted butter to form the batter.
  5. Drop spoonfuls of dumpling batter into simmering soup. Cover and cook for 15–20 minutes until dumplings are puffed and cooked through.
  6. Stir in cooked chicken, taste, and adjust seasoning as needed. Remove bay leaf before serving.
  7. Ladle soup into bowls and garnish with parsley, if desired.
