- 1 lb juicy chicken breast (diced or shredded)
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup half-and-half (for creaminess)
- 2 teaspoons dried thyme
- Salt and pepper to taste
- 2 tablespoons all-purpose flour (for thickening)
- 2 cloves garlic, minced
- 1 bay leaf
- For the Dumplings: 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon garlic powder (optional)
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add diced chicken and cook until browned. Remove chicken and set aside. In the same pot, sauté onions, carrots, and celery until softened (5–7 minutes).
- Add minced garlic and cook for 1 minute. Sprinkle flour over vegetables, stirring well to coat.
- Pour in chicken broth, half-and-half, thyme, salt, and pepper. Bring to a simmer and cook for 10-15 minutes until vegetables are tender.
- In a medium bowl, combine flour, baking powder, salt, and garlic powder. Stir in milk and melted butter to form the batter.
- Drop spoonfuls of dumpling batter into simmering soup. Cover and cook for 15–20 minutes until dumplings are puffed and cooked through.
- Stir in cooked chicken, taste, and adjust seasoning as needed. Remove bay leaf before serving.
- Ladle soup into bowls and garnish with parsley, if desired.
