Delicious Chicken Piccata Meatballs for a Flavorful Twist
Ingredients

- 1 lb Ground chicken
- 1/2 cup Grated parmesan cheese
- 1/2 cup Panko breadcrumbs
- 1 tsp Salt
- 2 cloves Garlic, minced
- 1 tbsp Lemon zest
- 2 tbsp Olive oil
- 2 tbsp Butter
- 2 tbsp Flour
- 1 cup Chicken broth
- 2 tbsp Capers
- 1 tbsp Caper brine
- 2 tbsp Lemon juice
Instructions
- In a large bowl, combine ground chicken, parmesan cheese, panko breadcrumbs, salt, minced garlic, and lemon zest. Stir until well blended.
- Using about 2 tablespoons of the mixture, roll into golf ball-sized meatballs.
- Warm a large sauté pan over medium-high heat and add olive oil until shimmering.
- Add the meatballs to the pan and turn every few minutes for even cooking, until golden brown, about 6 minutes.
- Remove meatballs and set aside.
- In the same pan, add butter and minced garlic. Melt and whisk in flour for 1 minute.
- Gradually whisk in the chicken broth, stir in the capers, caper brine, and lemon juice. Simmer for 6-7 minutes until thick.
- Return meatballs to the pan and cook with the sauce for another 5-6 minutes.
- Serve over pasta, rice, or enjoy plain.
