Description

Delicious Chicken Piccata Meatballs for a Flavorful Twist


Ingredients

  • 1 lb Ground chicken
  • 1/2 cup Grated parmesan cheese
  • 1/2 cup Panko breadcrumbs
  • 1 tsp Salt
  • 2 cloves Garlic, minced
  • 1 tbsp Lemon zest
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 1 cup Chicken broth
  • 2 tbsp Capers
  • 1 tbsp Caper brine
  • 2 tbsp Lemon juice

Instructions

  1. In a large bowl, combine ground chicken, parmesan cheese, panko breadcrumbs, salt, minced garlic, and lemon zest. Stir until well blended.
  2. Using about 2 tablespoons of the mixture, roll into golf ball-sized meatballs.
  3. Warm a large sauté pan over medium-high heat and add olive oil until shimmering.
  4. Add the meatballs to the pan and turn every few minutes for even cooking, until golden brown, about 6 minutes.
  5. Remove meatballs and set aside.
  6. In the same pan, add butter and minced garlic. Melt and whisk in flour for 1 minute.
  7. Gradually whisk in the chicken broth, stir in the capers, caper brine, and lemon juice. Simmer for 6-7 minutes until thick.
  8. Return meatballs to the pan and cook with the sauce for another 5-6 minutes.
  9. Serve over pasta, rice, or enjoy plain.
