- 8 ounces mushrooms
- 1 large red bell pepper
- 1 medium red onion
- 1 pound boneless skinless chicken breasts
- 1 medium lemon wedges
- 1/4 cup minced parsley
- 1/3 cup crumbled feta
Instructions
- Preheat the Grill: Start by placing a grill basket on your grill grates and preheating it to 500°F (or 360°C).
- Whisk the Marinade: In a mixing bowl, combine fresh lemon juice, olive oil, homemade Greek seasoning, garlic paste, kosher salt, and black pepper. Whisk until well blended.
- Marinate the Chicken and Veggies: Divide your prepped veggies and chicken into two bowls. Drizzle the marinade over each bowl, tossing gently.
- Skewer the Chicken: Thread the marinated chicken onto metal skewers, ensuring they’re snug.
- Grill the Veggies and Chicken: Add the veggies to the grill basket. Place the chicken skewers on the grill grates. Grill, turning every 2 to 3 minutes.
- Rest and Serve: Remove from the grill and allow to rest for a few minutes. Slide the chicken off the skewers.
- Garnish with Freshness: Sprinkle minced parsley, add fresh lemon juice, and crumble feta over the top.
