  • 8 ounces mushrooms
  • 1 large red bell pepper
  • 1 medium red onion
  • 1 pound boneless skinless chicken breasts
  • 1 medium lemon wedges
  • 1/4 cup minced parsley
  • 1/3 cup crumbled feta

Instructions

  1. Preheat the Grill: Start by placing a grill basket on your grill grates and preheating it to 500°F (or 360°C).
  2. Whisk the Marinade: In a mixing bowl, combine fresh lemon juice, olive oil, homemade Greek seasoning, garlic paste, kosher salt, and black pepper. Whisk until well blended.
  3. Marinate the Chicken and Veggies: Divide your prepped veggies and chicken into two bowls. Drizzle the marinade over each bowl, tossing gently.
  4. Skewer the Chicken: Thread the marinated chicken onto metal skewers, ensuring they’re snug.
  5. Grill the Veggies and Chicken: Add the veggies to the grill basket. Place the chicken skewers on the grill grates. Grill, turning every 2 to 3 minutes.
