Ingredients

- 1 cup cooked brown rice or quinoa
- 1 can chickpeas, rinsed and drained
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1 cucumber, chopped
- 2 carrots, shredded
- 1 cup roasted broccoli
- 2 tbsp tahini
- 2 tbsp lemon juice
- 1 garlic clove, minced
- Water (to thin dressing)
- Salt and pepper to taste
- Optional toppings: seeds, herbs, hot sauce
Instructions
- Cook your grains according to package instructions.
- In a pan, add chickpeas and spices; roast or sauté until crispy.
- Prep your veggies by chopping or shredding.
- Whisk together tahini, lemon juice, garlic, and water to make the dressing.
- Assemble the bowl by layering grains, chickpeas, veggies, and dressing; finish with optional toppings.
