Description

A hearty and customizable grain bowl featuring spiced chickpeas and a zesty tahini dressing, perfect for quick weeknight dinners.


Ingredients

  • 1 cup cooked brown rice or quinoa
  • 1 can chickpeas, rinsed and drained
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 cucumber, chopped
  • 2 carrots, shredded
  • 1 cup roasted broccoli
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1 garlic clove, minced
  • Water (to thin dressing)
  • Salt and pepper to taste
  • Optional toppings: seeds, herbs, hot sauce

Instructions

  1. Cook your grains according to package instructions.
  2. In a pan, add chickpeas and spices; roast or sauté until crispy.
  3. Prep your veggies by chopping or shredding.
  4. Whisk together tahini, lemon juice, garlic, and water to make the dressing.
  5. Assemble the bowl by layering grains, chickpeas, veggies, and dressing; finish with optional toppings.

Notes

Experiment with different veggies and grains to make the bowl your own. Leftover ingredients can be used for added flavor.
