Description

A smoky, spicy, and creamy chipotle sauce with garlic and sour cream. This versatile condiment is perfect as a dip, spread, or sauce for various dishes.

Ingredients

Scale
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 2 whole chipotle peppers in adobo + 1 tbsp adobo sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh lime juice
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt, or to taste
  • 1 tbsp olive oil (optional)

Instructions

  1. If desired, roast garlic cloves until golden and soft for a milder flavor.
  2. Chop the chipotle peppers.
  3. In a blender or food processor, combine sour cream, mayonnaise, chopped chipotles and adobo sauce, garlic, lime juice, smoked paprika, cumin, and salt.
  4. Blend until smooth, about 30-60 seconds.
  5. Taste and adjust seasoning for heat, spice, salt, and lime.
  6. If the sauce is too thick, add a splash of olive oil or water and blend briefly.
  7. Transfer the chipotle garlic sour cream sauce to an airtight container.
  8. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For those who prefer a milder garlic flavor, roasting the garlic before mincing is recommended.
  • Adjust the amount of chipotle peppers and adobo sauce to control the spiciness.
  • For a healthier option, substitute Greek yogurt for sour cream and mayonnaise.
  • The sauce can be used as a marinade for chicken or shrimp.
  • Store the chipotle garlic sour cream sauce in an airtight container in the refrigerator for up to 5-7 days. The flavor often improves after the first day.
