  • For the Turkey Roast: 1 large boneless turkey breast (2–3 lbs / about 900 g–1.3 kg), butterflied
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • For the Savory Stuffing: 2 tbsp butter
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 celery stalk, diced
  • 1 small carrot, diced
  • 1 cup breadcrumbs
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried sage
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh parsley
  • Optional Garnishes: Fresh rosemary sprigs
  • Orange slices
  • Fresh cranberries
  • Extra chopped parsley

Instructions

  1. Place the boneless turkey breast on a cutting board. Using a sharp knife, carefully slice through the thickest part horizontally, stopping just before cutting all the way through, then open it like a book to create a large, flat piece.
  2. Cover the butterflied turkey breast with plastic wrap and gently pound with a meat mallet until it is an even thickness throughout.
  3. In a skillet over medium heat, melt the butter. Add the diced onion, garlic, celery, and carrot. Sauté for 5–7 minutes, or until the vegetables are softened and fragrant.
  4. Stir in the breadcrumbs, chicken broth, thyme, rosemary, sage, salt, and pepper. Mix until the breadcrumbs are evenly moistened but not soggy. Remove from heat and let the stuffing cool slightly, then stir in the chopped parsley.
  5. Lay the flattened turkey breast skin-side down on your work surface. Spread the cooled stuffing evenly over the turkey, leaving a small border around the edges.
  6. Starting from one long side, roll the turkey up tightly like a jelly roll. Use butcher’s twine to tie the roast at 2-inch intervals.
  7. In a small bowl, combine the olive oil, salt, black pepper, garlic powder, onion powder, and paprika. Rub this mixture all over the outside of the tied turkey roast.
  8. Preheat the oven to 350°F (175°C). Place the stuffed turkey roast on a rack in a roasting pan. Roast for 70–90 minutes, or until an instant-read thermometer registers 165°F (74°C).
  9. Remove the pan from the oven, tent the turkey loosely with aluminum foil, and let it rest for about 10 minutes.
  10. Remove the butcher’s twine, then slice the roast into thick rounds to reveal the stuffing spiral. Arrange on a serving platter and garnish as desired.
