- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- Fresh cilantro and lime wedges, for garnish
Instructions
- Marinate the Steak: Combine olive oil, lime juice, chopped cilantro, garlic, chili powder, cumin, salt, and pepper in a bowl. Add the flank steak and let it marinate in the fridge for at least 1 hour—overnight is even better for deeper flavor.
- Prepare the Rice and Toppings: Cook your rice according to package instructions. Dice the avocado, red onion, and cherry tomatoes. Drain and rinse the black beans and corn. Set everything aside.
- Cook the Steak: Heat a skillet or grill pan over medium-high heat. Cook the steak for about 4–5 minutes on each side, depending on thickness and desired doneness. Let it rest for 5–10 minutes, then slice thinly against the grain.
- Assemble the Bowls: Layer the rice in the bottom of each bowl. Top with sliced steak, black beans, corn, tomatoes, avocado, and onion. Garnish with fresh cilantro and lime wedges. Serve immediately or store for later.
