Ingredients

- 1 can (15 oz) chickpeas, drained
- 1 large ripe banana, mashed
- 1/2–3/4 cup oats
- 1/4 cup cocoa powder
- 1–2 tbsp maple syrup (or honey if not vegan)
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a food processor, combine the chickpeas, mashed bananas, cocoa powder, oats, maple syrup (if using), vanilla extract, baking powder, and salt. Blend until smooth.
- Using a spoon, scoop the mixture onto the prepared baking sheet, forming cookie shapes.
- Bake for 15-20 minutes or until the edges are firm.
- Allow to cool before serving. Enjoy your healthy dessert!
Notes
For chewier cookies, slightly underbake and let them set on the baking sheet for an extra 5 minutes.
