Description

Delicious and nutritious cookies made with chickpeas and bananas, perfect for a healthy treat.


Ingredients

Scale
  • 1 can (15 oz) chickpeas, drained
  • 1 large ripe banana, mashed
  • 1/23/4 cup oats
  • 1/4 cup cocoa powder
  • 12 tbsp maple syrup (or honey if not vegan)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine the chickpeas, mashed bananas, cocoa powder, oats, maple syrup (if using), vanilla extract, baking powder, and salt. Blend until smooth.
  3. Using a spoon, scoop the mixture onto the prepared baking sheet, forming cookie shapes.
  4. Bake for 15-20 minutes or until the edges are firm.
  5. Allow to cool before serving. Enjoy your healthy dessert!

Notes

For chewier cookies, slightly underbake and let them set on the baking sheet for an extra 5 minutes.
