- 1 pound Ground Turkey (can substitute with ground chicken or lean beef)
- 1 cup Wild Rice (can substitute with brown rice or quinoa)
- 1 medium Sweet Potato (can use butternut squash or carrots)
- 2 cups Cabbage (or use kale or spinach)
- 1 can Cream of Mushroom Soup (can substitute with cream of chicken soup)
- 1 medium Onion (chopped)
- 2 cloves Garlic (minced)
- 1 cup Shredded Cheese (sprinkle on top during the last few minutes of baking)
Instructions
- Preheat your oven to 350°F (175°C). Gather all your ingredients.
- In a large skillet, add olive oil and brown 1 pound of ground turkey for 5–7 minutes.
- Add 1 chopped onion and 2 minced garlic cloves, and cook for an additional 3–4 minutes.
- Combine turkey mixture with 1 cup of wild rice, 1 diced sweet potato, and 2 cups of chopped cabbage, then pour in 1 can of cream of mushroom soup.
- Pour the mixture into a greased 9×13-inch baking dish.
- Cover the dish with aluminum foil and bake for 45 minutes to 1 hour.
- Remove the foil during the last 10 minutes of baking to crisp the top.
- Let it cool for a few minutes before serving hot.
