Description

A creamy, high-protein chocolate mousse using cottage cheese, cocoa, and whipped cream for a light texture.


Ingredients

Scale
  • 450 g (2 cups) small-curd cottage cheese
  • 40 g (1/3 cup) unsweetened cocoa powder
  • 60 g (4 tbsp) honey or maple syrup
  • 60 g (2 oz) dark chocolate (60–70% cacao), melted
  • 120 ml (1/2 cup) heavy cream
  • 1 tsp (5 ml) pure vanilla extract
  • Pinch of fine salt (about 1/8 tsp)
  • Optional garnish: shaved dark chocolate, cocoa nibs, fresh berries, or flaky sea salt

Instructions

  1. Melt the chocolate by chopping it and melting gently in a heatproof bowl over simmering water or in the microwave, then cool slightly.
  2. Blend the cottage cheese, cocoa powder, honey, vanilla, and salt in a blender until smooth.
  3. Add the melted chocolate to the blender and blend until fully incorporated.
  4. Whip the heavy cream in a chilled bowl to soft peaks.
  5. Fold one-third of the whipped cream into the chocolate mixture, then fold in the rest gently.
  6. Portion the mousse into serving cups and chill for at least 30 minutes before serving.

Notes

For a lighter version, use low-fat cottage cheese and skip the cream.
