Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
- Stir in the minced garlic and sauté for an additional minute until fragrant.
- Add the diced sweet potatoes to the pot and mix well with the sautéed vegetables.
- Sprinkle in the ground cumin, paprika, black pepper, and salt. Stir to combine all the ingredients.
