Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
  2. Stir in the minced garlic and sauté for an additional minute until fragrant.
  3. Add the diced sweet potatoes to the pot and mix well with the sautéed vegetables.
  4. Sprinkle in the ground cumin, paprika, black pepper, and salt. Stir to combine all the ingredients.
  5. Add the vegetable broth to the pot, ensuring that all the vegetables are submerged.
  6. Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low.
  7. Cover the pot and allow the soup to simmer for 25-30 minutes, or until the sweet potatoes are tender.
  8. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup to a blender in batches.
  9. Taste the soup and adjust the seasoning if necessary, adding more salt or spices to your preference.
  10. Ladle the soup into bowls and garnish with optional toppings like fresh cilantro, a dollop of Greek yogurt, or crunchy croutons.
