Description

Ingredients

  • 1.0 cup fresh cranberries
  • 0.5 cup chopped walnuts
  • 2.0 tablespoons olive oil
  • 2.0 tablespoons honey
  • 1.0 tablespoon balsamic vinegar
  • 2.0 cloves garlic
  • 1.0 teaspoon fresh thyme
  • 0.0 teaspoon salt
  • 0.0 teaspoon pepper
  • 0.25 teaspoon crushed red pepper flakes
  • 0.0 cup fresh parsley

Instructions

  1. In a medium bowl, season the turkey tenderloin pieces with salt, pepper, and thyme. Toss to coat evenly.
  2. Heat olive oil in a large skillet over medium-high heat. Add the turkey pieces and cook for about 5-7 minutes, until they’re golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and cook for about 30 seconds, until fragrant. Add the fresh cranberries, honey, balsamic vinegar, crushed red pepper flakes, and a pinch of salt and pepper. Stir well and bring to a simmer. Cook for about 5-8 minutes, until the cranberries burst and the mixture thickens slightly.
  4. Return the cooked turkey bites to the skillet. Toss everything together to coat the turkey evenly in the cranberry sauce. Add the chopped walnuts and stir to combine.
  5. Remove from heat and garnish with fresh parsley. Serve warm, either as a main dish with a side of your choice or as bite-sized appetizers.
