- 1.0 lb turkey tenderloin
- 1.0 cup fresh cranberries
- 0.5 cup chopped walnuts
- 2.0 tablespoons olive oil
- 2.0 tablespoons honey
- 1.0 tablespoon balsamic vinegar
- 2.0 cloves garlic
- 1.0 teaspoon fresh thyme
- 0.0 teaspoon salt
- 0.0 teaspoon pepper
- 0.25 teaspoon crushed red pepper flakes
- 0.0 cup fresh parsley
Instructions
- In a medium bowl, season the turkey tenderloin pieces with salt, pepper, and thyme. Toss to coat evenly.
- Heat olive oil in a large skillet over medium-high heat. Add the turkey pieces and cook for about 5-7 minutes, until they’re golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and cook for about 30 seconds, until fragrant. Add the fresh cranberries, honey, balsamic vinegar, crushed red pepper flakes, and a pinch of salt and pepper. Stir well and bring to a simmer. Cook for about 5-8 minutes, until the cranberries burst and the mixture thickens slightly.
- Return the cooked turkey bites to the skillet. Toss everything together to coat the turkey evenly in the cranberry sauce. Add the chopped walnuts and stir to combine.
- Remove from heat and garnish with fresh parsley. Serve warm, either as a main dish with a side of your choice or as bite-sized appetizers.
