Description

Creamed Spinach is your new favorite side dish. It brings together all the elements of your meal with a creamy, bright flavor.


Ingredients

  • 5 tablespoons butter
  • 2 shallots (chopped)
  • 2 and 1/4 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon nutmeg
  • 5 cloves garlic (smashed and minced)
  • 1/4 cup flour
  • 1 and 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 16 ounces fresh baby spinach (chopped)
  • 1/2 cup Pecorino Romano cheese (shredded)
  • 2 teaspoons lemon zest (from 1 lemon)
  • 1/4 cup fresh lemon juice (from that same 1 lemon)

Instructions

  1. Prep all your veggies: chop shallots, mince garlic, and chop spinach.
  2. Melt butter in a 12-inch skillet over medium heat.
  3. Add chopped shallots and stir.
  4. Add spices: kosher salt, black pepper, cayenne pepper, and nutmeg.
  5. Cook shallots and spices for 3-5 minutes until soft.
  6. Add minced garlic and stir for 1 minute until fragrant.
  7. Sprinkle flour over the mixture and stir for 1 minute.
  8. Slowly add milk, letting it absorb into the flour mixture gradually.
  9. Add heavy cream slowly and stir until combined.
  10. Add chopped spinach in increments, stirring until wilted before adding more.
  11. Simmer creamed spinach for about 10 minutes on medium or medium-low heat.
  12. Add freshly shredded cheese and stir until melted.
  13. Add lemon zest and juice, then stir.
  14. Taste and adjust seasonings as needed.
  15. Store covered in the fridge and reheat to serve.
  16. Make ahead: Can be made up to 2 days in advance.
