- 5 tablespoons butter
- 2 shallots (chopped)
- 2 and 1/4 teaspoons kosher salt
- 3/4 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon nutmeg
- 5 cloves garlic (smashed and minced)
- 1/4 cup flour
- 1 and 1/2 cups whole milk
- 1/2 cup heavy cream
- 16 ounces fresh baby spinach (chopped)
- 1/2 cup Pecorino Romano cheese (shredded)
- 2 teaspoons lemon zest (from 1 lemon)
- 1/4 cup fresh lemon juice (from that same 1 lemon)
Instructions
- Prep all your veggies: chop shallots, mince garlic, and chop spinach.
- Melt butter in a 12-inch skillet over medium heat.
- Add chopped shallots and stir.
- Add spices: kosher salt, black pepper, cayenne pepper, and nutmeg.
- Cook shallots and spices for 3-5 minutes until soft.
- Add minced garlic and stir for 1 minute until fragrant.
- Sprinkle flour over the mixture and stir for 1 minute.
- Slowly add milk, letting it absorb into the flour mixture gradually.
- Add heavy cream slowly and stir until combined.
- Add chopped spinach in increments, stirring until wilted before adding more.
- Simmer creamed spinach for about 10 minutes on medium or medium-low heat.
- Add freshly shredded cheese and stir until melted.
- Add lemon zest and juice, then stir.
- Taste and adjust seasonings as needed.
- Store covered in the fridge and reheat to serve.
- Make ahead: Can be made up to 2 days in advance.
