Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 1 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the chopped onion. Sauté for about 3-4 minutes until translucent.
  5. Stir in the minced garlic and cook for an additional minute until fragrant.
  6. Pour in the chicken broth, scraping the bottom of the skillet to release any brown bits. Allow it to simmer for 2-3 minutes.
  7. Stir in the heavy cream and Dijon mustard. Mix well until combined and simmer for 5 minutes to thicken slightly.
  8. Place the cooked chicken back into the skillet, coating it well with the sauce. Cook for an additional 2-3 minutes until heated through.
  9. Remove from heat, sprinkle with fresh parsley, and serve hot.
