- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 3 tablespoons Dijon mustard
- 1 cup chicken broth
- 1 tablespoon fresh parsley, chopped (for garnish)
- Salt and pepper, to taste
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium heat.
- Add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion. Sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth, scraping the bottom of the skillet to release any brown bits. Allow it to simmer for 2-3 minutes.
- Stir in the heavy cream and Dijon mustard. Mix well until combined and simmer for 5 minutes to thicken slightly.
- Place the cooked chicken back into the skillet, coating it well with the sauce. Cook for an additional 2-3 minutes until heated through.
- Remove from heat, sprinkle with fresh parsley, and serve hot.
