  • 4 boneless, skinless chicken thighs
  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons paprika (smoked or sweet)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry and season them with paprika, salt, and black pepper on both sides.
  3. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat.
  4. Add the chicken thighs to the skillet and cook for 5-7 minutes until browned on both sides. Remove and set aside.
  5. In the same skillet, add chopped onion and minced garlic. Cook until the onion is translucent, about 3-4 minutes.
  6. Stir in the sliced zucchinis and sauté for another 5 minutes until slightly softened.
  7. Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.
  8. Nestle the browned chicken thighs back into the skillet, spooning some of the sauce over them.
  9. Transfer the skillet to the preheated oven. Bake for 20 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  10. Remove from the oven, and garnish with fresh parsley if desired. Serve warm.
