Description

A creamy, hearty sausage and potato chowder perfect for a comforting meal.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cubed peeled potatoes
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1.5 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook until browned. Remove sausage with a slotted spoon and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth, add potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Stir in milk and heavy cream. Heat through, but do not boil.
  6. Return the cooked sausage to the pot. Stir in fresh parsley.
  7. Serve your delicious creamy sausage potato chowder hot.

Notes

  • For a thicker chowder, you can mash some of the cooked potatoes against the side of the pot.
  • You can substitute Italian sausage for smoked sausage.
  • Add a pinch of cayenne pepper for a little heat.
  • Garnish with extra parsley or shredded cheese.
