A creamy, hearty sausage and potato chowder perfect for a comforting meal.

- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 cup chopped yellow onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cubed peeled potatoes
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1.5 cups milk
- 1/2 cup heavy cream
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook until browned. Remove sausage with a slotted spoon and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth, add potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in milk and heavy cream. Heat through, but do not boil.
- Return the cooked sausage to the pot. Stir in fresh parsley.
- Serve your delicious creamy sausage potato chowder hot.
Notes
- For a thicker chowder, you can mash some of the cooked potatoes against the side of the pot.
- You can substitute Italian sausage for smoked sausage.
- Add a pinch of cayenne pepper for a little heat.
- Garnish with extra parsley or shredded cheese.
