Instructions

  1. Prepare your mold: Line a baking sheet or tray with parchment paper or lightly grease a flat surface like a marble countertop. Have an oiled spatula or rolling pin ready.
  2. Make the caramel: In a thick-bottomed saucepan, combine sugar, water, and lemon juice. Heat over medium heat without stirring until it turns a golden caramel color, about 7-10 minutes. Watch carefully to prevent burning.
  3. Add the peanuts: Once the caramel is amber-colored, remove from heat and quickly stir in the peanuts, ensuring they are well coated.
  4. Spread the mixture: Immediately pour onto your prepared surface. Spread as quickly as possible using a lightly oiled spatula or rolling pin to about 0.5-1 cm thickness.
  5. Score before it hardens: Before the brittle cools completely, score lines to make it easier to break or cut once hardened. Let it cool completely, then break or cut into pieces.

Notes

  • You can substitute peanuts with other nuts like almonds, cashews, pistachios, or a mix.
  • For a more intense flavor, use dry-roasted peanuts.
  • Add a pinch of cinnamon or vanilla to the caramel for flavored versions.
  • Work quickly once the caramel is ready, as it hardens very fast.
