Ingredients

  • 1 cup Sushi Rice
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Granulated Sugar
  • 1 teaspoon Kosher Salt
  • 1 cup Water
  • 4 sheets Nori Sheets
  • 1 medium Hot House Cucumber
  • 1 medium Avocado
  • 1 cup Imitation Crab Meat
  • 1 tablespoon Toasted Sesame Seeds

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Cook the rice according to package instructions and let it cool slightly.
  3. Combine rice vinegar, granulated sugar, and kosher salt in a small saucepan over low heat. Stir until dissolved, then cool.
  4. Fold the vinegar mixture into the cooked sushi rice until evenly coated.
  5. Prepare your sushi mat with plastic wrap, then lay down a nori sheet shiny side down.
  6. Spread a thin layer of sushi rice over the nori, leaving 1 inch at the top edge.
  7. Arrange cucumber, avocado, and imitation crab in a line across the center of the rice.
  8. Roll the sushi away from you, pressing gently to create a tight roll.
  9. Slice the roll into bite-sized pieces using a sharp, wet knife.
  10. Serve with soy sauce and toasted sesame seeds.
