Ingredients

  • 2 cups All-purpose flour
  • 2 cups Bread flour
  • 1 cup Sugar
  • 1 large Egg
  • 1/2 cup Soft butter
  • 1/2 cup Brown sugar
  • 1/4 cup Sugar
  • 1/2 cup Soft butter
  • 1 cup Flour
  • 1 tablespoon Zest of lemon
  • 2 cups Whole milk
  • 3 large Eggs
  • 3 tablespoons Cornstarch
  • 1/2 cup Sugar
  • 1 piece Peel from lemon
  • 3 cups Fresh peaches (sliced)
  • 2 tablespoons Brown sugar (for topping)
  • 1 large Egg (for egg wash)

Instructions

  1. Prepare the Crumble: In a bowl, mix the brown sugar, sugar, flour, soft butter, and lemon zest until sandy. Chill this mixture in the refrigerator while you prepare the dough.
  2. Activate Yeast: In a small bowl, combine warm water with sugar and yeast. Let it sit for about 15 minutes until it becomes foamy.
  3. Make the Dough: In a large bowl, mix all-purpose flour, bread flour, sugar, egg, and soft butter together. Add the foamy yeast mixture and knead the dough for about 15 minutes until smooth.
  4. Proof: Let the dough proof in a warm place for 75 minutes, or until it doubles in size.
  5. Prepare the Custard: In a pot, heat the whole milk with the lemon peel and sugar until it’s simmering. In a separate bowl, whisk the eggs and cornstarch. Gradually temper this mixture with the hot milk, then cook on low until it thickens. Strain and chill while your dough proofs.
  6. Shape the Dough: Once the dough has risen, divide it into six equal balls. Form wells in the center of each ball using your thumb and let it proof again for an additional 15 minutes.
  7. Fill and Top: After the second proofing, brush each dough ball with an egg wash. Fill the wells with custard, layer in peach slices, and sprinkle the chilled crumble topping over the top. Finish with a sprinkle of brown sugar.
  8. Bake to Perfection: Bake the brioche in a preheated oven at 320°F (160°C) for 20 minutes, or until golden brown.
  9. Serve and Enjoy: Cool slightly before serving. This Peach Brioche can be enjoyed warm or chilled.
