Description

Poha is a comforting and easy dish made with flattened rice, spices, and vegetables—perfect for any meal of the day.


Ingredients

  • 2 cups flattened rice (poha)
  • 1 onion, finely chopped
  • 12 green chilies, chopped (optional)
  • 1/2 teaspoon mustard seeds
  • 1012 curry leaves
  • 1/2 teaspoon turmeric powder
  • Salt, to taste
  • 2 tablespoons oil
  • Fresh cilantro, for garnish
  • Lemon juice, to taste
  • A pinch of sugar (optional)

Instructions

  1. Rinse the flattened rice under cold water and let it sit in a colander for a couple of minutes.
  2. Heat oil in a pan, add mustard seeds and curry leaves, and let them splutter.
  3. Add the chopped onions and green chilies, and sauté until the onions are translucent.
  4. Add the soaked flattened rice, turmeric powder, and salt to the pan.
  5. Give everything a gentle toss.
  6. Garnish with fresh cilantro and a squeeze of lemon juice. Add a pinch of sugar if desired for sweetness.

Notes

Be gentle while mixing to keep poha fluffy. Avoid soaking rice too long to prevent mushiness.
