Ingredients

- 2 cups flattened rice (poha)
- 1 onion, finely chopped
- 1–2 green chilies, chopped (optional)
- 1/2 teaspoon mustard seeds
- 10–12 curry leaves
- 1/2 teaspoon turmeric powder
- Salt, to taste
- 2 tablespoons oil
- Fresh cilantro, for garnish
- Lemon juice, to taste
- A pinch of sugar (optional)
Instructions
- Rinse the flattened rice under cold water and let it sit in a colander for a couple of minutes.
- Heat oil in a pan, add mustard seeds and curry leaves, and let them splutter.
- Add the chopped onions and green chilies, and sauté until the onions are translucent.
- Add the soaked flattened rice, turmeric powder, and salt to the pan.
- Give everything a gentle toss.
- Garnish with fresh cilantro and a squeeze of lemon juice. Add a pinch of sugar if desired for sweetness.
Notes
Be gentle while mixing to keep poha fluffy. Avoid soaking rice too long to prevent mushiness.
