Description

Delicious and customizable turkey taco bowls perfect for meal prep or a quick weeknight dinner.


Ingredients

Scale
  • 1 lb ground turkey
  • 2 cups rice or cauliflower rice
  • 1 can black beans, drained
  • 1 cup sweet corn
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1 lime, juiced
  • Fresh cilantro, for garnish
  • Taco seasoning, to taste
  • Optional toppings: pickled jalapeños, grated carrots or zucchini

Instructions

  1. In a skillet, cook the ground turkey over medium heat, seasoning with taco seasoning until cooked through and golden.
  2. While the turkey cooks, prepare the rice or cauliflower rice according to package instructions.
  3. In bowls, layer the base of rice, followed by the cooked turkey, and then add your choice of toppings: black beans, corn, tomatoes, cheese, avocado, salsa, and sour cream.
  4. Squeeze lime juice over the bowls and garnish with fresh cilantro.
  5. For meal prep, store toppings separately to keep them fresh.

Notes

These taco bowls are highly customizable. Feel free to swap ingredients based on your preference, and prepare them ahead of time for easy lunches.
