- 1 can Coconut milk
- 2 tablespoons Red curry paste
- 3 tablespoons Soy sauce
- 1 tablespoon Rice vinegar
- 1 tablespoon Honey or sugar
- 1 tablespoon Sesame oil
- 2 cloves Garlic
- 1 inch Ginger
- 12 ounces Dumplings
- 2 cups Bok choy
- 1 medium Zucchini
- 2 tablespoons Sesame seeds
- 2 stalks Sliced green onions
- ¼ cup Cilantro
- 1 tablespoon Chili crisp oil
- 2 cups Jasmine rice or noodles
Instructions
- In a large baking dish, combine the coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil. Whisk until smooth, then grate in garlic and ginger.
- Preheat your oven to 400°F (200°C). Chop bok choy and slice zucchini, mixing into the curry mixture.
- Place the dumplings in a single layer, pressing them into the broth. Cover with foil.
- Bake covered for 20 minutes, then remove foil and bake for another 5-10 minutes until bubbly.
- Once out of the oven, add garnishes and serve over jasmine rice or noodles.
