- 1 cup mascarpone cheese
- 1/3 cup sugar
- 3 large eggs
- 1 cup Earl Grey tea
- 1 cup coffee
- 24 pieces ladyfingers (Savoiardi)
- 2 tablespoons cocoa powder
Instructions
- Brew a strong cup of Earl Grey tea, steeping for about 5 minutes. Let it cool to room temperature.
- In a bowl, combine 1 cup of mascarpone cheese with 1/3 cup of sugar; blend until smooth and creamy.
- Separate 3 large eggs; whisk the yolks until pale and creamy, then fold into the mascarpone mixture.
- Whip the egg whites until stiff peaks form, then gently fold into the mascarpone mixture.
- Brew a cup of coffee and dip each ladyfinger briefly into the coffee, soaking but not soggy.
- Layer dipped ladyfingers in a 9×9 dish, spread half of the mascarpone mixture on top, and repeat.
- Cover the dish and chill in the refrigerator for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and cut into squares.
