Description

Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 1 ¼ cups (250g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 1 large egg
  • ⅓ cup eggnog (full-fat recommended)
  • 2 teaspoons pure vanilla extract
  • ¼ cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)
  • ¼ teaspoon ground nutmeg (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together.
  3. In a large bowl, beat the butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 2 to 3 minutes.
  4. Add the egg and mix until incorporated. Pour in the eggnog and vanilla, then mix until combined.
  5. Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
  6. Cover the dough and refrigerate for at least 30 minutes.
  7. In a small bowl, mix the granulated sugar, cinnamon, and nutmeg for the coating.
  8. Scoop about 1.5 tablespoons of dough, roll into balls, and coat in the spiced sugar mix.
  9. Arrange the coated balls on the baking sheets with 2 inches of space between each.
  10. Bake for 10 to 12 minutes until edges are set and tops have small cracks.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
