- For the Brownies:
- 1 cup unsalted butter (2 sticks)
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 tablespoons brewed espresso (or strong coffee)
- For the Espresso Whipped Cream:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 tablespoon brewed espresso (cooled)
- 1/2 teaspoon vanilla extract
- For the Chocolate Ganache:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
- Melt Butter: In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the sugar until well combined.
- Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and brewed espresso.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
- Mix Together: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Bake: Pour the brownie batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely in the pan.
- Whip Cream: In a mixing bowl, combine the heavy cream, powdered sugar, brewed espresso, and vanilla extract. Using an electric mixer, whip until soft peaks form.
- Heat Cream: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Add Chocolate Chips: Remove from heat and add the chocolate chips. Let sit for a few minutes, then stir until smooth and glossy.
- Cut Brownies: Once the brownies are completely cool, cut them into small squares.
- Layer Ingredients: In serving glasses or bowls, layer the following:
- A layer of brownie squares
- A layer of espresso whipped cream
- A drizzle of chocolate ganache
- Repeat the layers until the glasses are filled, finishing with a layer of whipped cream and a drizzle of ganache on top.
- Chill and Enjoy: Refrigerate the parfaits for at least 30 minutes before serving to allow the flavors to meld. Serve chilled and enjoy!
Notes
- Allow the brownies to cool completely for easier layering.
- Use strong coffee if you don’t have espresso.
