- 2 pounds Beef, chopped into bite-sized pieces
- Salt (to taste)
- Pepper (to taste)
- 2 tablespoons Vegetable Oil, divided
- 1 tablespoon Niter Kibbeh
- 1 large Onion, chopped
- 1–2 Spicy Chilies, chopped
- 1 tablespoon Ginger, chopped
- 3–4 cloves Garlic, chopped
- 2 tablespoons Berbere Spice Blend
- 1 cup Tomato Sauce
- 1 Tomato, chopped
- Injera or Pita
Instructions
- Season the beef with salt and pepper.
- Heat 1 tablespoon of oil in a large pan over medium heat. Add the beef pieces in batches and cook for 2-3 minutes per side until browned. Remove to a bowl.
- Add the remaining oil to the pan along with the niter kibbeh.
- Sauté the onion and chilies for 5 minutes until softened.
- Mix in the garlic, ginger, and berbere spice blend. Cook for 1 minute.
- Combine the tomato sauce and chopped tomato into the pan. Let it simmer for 5 minutes.
- Return the cooked beef to the pan and let it simmer for about 10 minutes.
- Serve hot with injera or warmed pita.
