Ingredients

  • 2.0 cups all-purpose flour
  • 1.0 cups fresh or frozen cranberries, roughly chopped
  • 1.0 cups granulated sugar
  • 0.5 cups unsalted butter, melted
  • 0.5 cups buttermilk
  • 3.0 large eggs
  • 1.0 teaspoon vanilla extract
  • 1.0 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 1.0 teaspoon baking soda
  • 1.0 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cups chopped walnuts or pecans (optional)
  • 1.0 pieces Zest of orange
  • to taste cups Extra sugar for sprinkling on top (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easier removal.
  2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In another bowl, whisk the melted butter, buttermilk, eggs, and vanilla extract until well combined. Stir in the orange zest.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix. Fold in the chopped cranberries and nuts if using.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula. If desired, sprinkle a little extra sugar on top for a sweet crust.
  6. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, you can cover it with aluminum foil halfway through baking.
  7. Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  8. Slice the bread and serve it warm or at room temperature. Enjoy this delightful treat with a pat of butter, or as a perfect holiday gift wrapped in festive paper!
