- 1.0 cups fresh or frozen cranberries, roughly chopped
- 1.0 cups granulated sugar
- 0.5 cups unsalted butter, melted
- 0.5 cups buttermilk
- 3.0 large eggs
- 1.0 teaspoon vanilla extract
- 1.0 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon ground ginger
- 1.0 teaspoon baking soda
- 1.0 teaspoon baking powder
- 0.5 teaspoon salt
- 0.5 cups chopped walnuts or pecans (optional)
- 1.0 pieces Zest of orange
- to taste cups Extra sugar for sprinkling on top (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easier removal.
- In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
- In another bowl, whisk the melted butter, buttermilk, eggs, and vanilla extract until well combined. Stir in the orange zest.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix. Fold in the chopped cranberries and nuts if using.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula. If desired, sprinkle a little extra sugar on top for a sweet crust.
- Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, you can cover it with aluminum foil halfway through baking.
- Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
