Ingredients

  • 1 tablespoon sugar
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 tablespoons oil
  • 1 large egg (separated)
  • 1/4 cup chocolate chips

Instructions

  1. In a mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Stir well.
  2. In a separate bowl, whisk together the milk, oil, and egg yolk until smooth.
  3. Gradually add the wet mixture into the dry ingredients, stirring gently.
  4. In a clean bowl, beat the egg white until stiff peaks form.
  5. Carefully fold the beaten egg whites into the batter.
  6. Gently fold in the chocolate chips.
  7. Heat a non-stick pan over medium heat and lightly oil it. Drop large spoonfuls of batter onto the pan and cover with a lid. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 2 minutes.
  8. Repeat with remaining batter. Serve warm with toppings.
