- 1 1/4 cups all-purpose flour
- 1 tablespoon sugar
- 1/2 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 2 tablespoons oil
- 1 large egg (separated)
- 1/4 cup chocolate chips
Instructions
- In a mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Stir well.
- In a separate bowl, whisk together the milk, oil, and egg yolk until smooth.
- Gradually add the wet mixture into the dry ingredients, stirring gently.
- In a clean bowl, beat the egg white until stiff peaks form.
- Carefully fold the beaten egg whites into the batter.
- Gently fold in the chocolate chips.
- Heat a non-stick pan over medium heat and lightly oil it. Drop large spoonfuls of batter onto the pan and cover with a lid. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 2 minutes.
- Repeat with remaining batter. Serve warm with toppings.
