- 3 pounds Boneless chuck roast
- 1 tablespoon Kosher salt
- 1 teaspoon Ground black pepper
- 2 tablespoons Olive oil
- 4 tablespoons Unsalted butter
- 3 large Yellow onions
- 3 cloves Fresh garlic
- 1 cup Dry white wine
- 4 cups Beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon All-purpose flour
- 2 leaves Bay leaves
- 1 teaspoon Fresh rosemary
- 1 teaspoon Fresh thyme
- 1 cup Gruyere cheese
- 1 loaf Sliced baguette
Instructions
- Preheat your oven to 300 degrees Fahrenheit.
- Season the chuck roast by patting it dry and sprinkling both sides with kosher salt and ground black pepper.
- Sear the roast by heating olive oil in a Dutch oven over medium-high heat, browning each side for about 5 minutes.
- Melt the butter in the pot, then add the sliced onions and caramelize for 25 to 30 minutes.
- Incorporate the minced garlic and cook for 2 minutes, then deglaze the pot with white wine.
- Reduce the wine by half, sprinkle flour over the onions and stir to coat.
- Pour in beef broth, Worcestershire sauce, bay leaves, rosemary, and thyme; bring to a simmer.
- Return the seared roast to the pot, cover tightly, and braise in the oven for 3½ hours.
- Optionally, cook for an extra 20 minutes for a more tender roast.
- Remove from oven and increase temperature to 400 degrees Fahrenheit.
- Shred the beef while in the pot, discarding excess fat and bay leaves.
- Sprinkle shredded Gruyère cheese over the beef and return to the oven for 5 to 7 minutes.
- Serve warm over mashed potatoes or alongside toasted baguette.
