Garlic Herb Prime Rib: 7 Steps to Perfectly Juicy Roast

Description

This easy garlic herb prime rib roast recipe is a restaurant-quality main dish. Juicy, slow-roasted, and seared for the most delicious crust.


Ingredients

  • 57 lb. Bone-in Prime Rib Roast
  • 5 garlic cloves, minced
  • 2 1/2 teaspoons truffle salt
  • 2 teaspoons of black pepper
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh oregano
  • 1/3 cup unsalted butter, softened
  • 1 large yellow onion
  • 1 head of garlic, sliced in half
  • 8 sprigs of thyme
  • 2 sprigs of rosemary

Instructions

  1. Remove your covered roast from the refrigerator and let it rest for 30 minutes prior to roasting to bring to room temperature.
  2. Prepare your roasting pan by adding 1 large onion to the bottom of the pan along with the whole head of garlic (sliced in half, flesh side up), 8 sprigs of thyme, and 2 sprigs of rosemary. Set aside.
  3. Pat Prime Rib Roast dry with a paper towel.
  4. Preheat oven to 225 degrees F.
  5. In a small bowl, add garlic cloves, salt, black pepper, fresh rosemary, fresh thyme, and fresh oregano. Using a spoon, mix together.
  6. Remove 1 tablespoon of the mixture and add it to another small bowl with 1/3 cup unsalted softened butter. Mix together, then set aside.
  7. To the bowl with the remaining herb mixture, add 2 tablespoons of olive oil and mix together to form a paste.
  8. Rub garlic herb paste all over the Prime Rib using your hands and place bone side down on a rack in a roasting pan.
  9. Roast, uncovered, for 3-4 hours, time will vary depending on the size of your roast. Using an instant read thermometer, check the temperature of the roast.
  10. When the center of the roast reaches 120 degrees F (for medium rare), remove from the oven and tent with tin foil for 20 minutes. Turn oven up to 500 degrees F.
  11. Once the oven reaches 500 degrees F, remove the tin foil tent and rub the garlic herb butter on the top and sides of the roast.
  12. Place roast back in oven, uncovered, for 15-20 minutes. You want the outside of the roast to be nicely browned.
  13. Remove prime rib roast from the oven and place on a cutting board to rest for 20 minutes.
  14. Serve with horseradish sauce or au jus.
