Ingredients

  • 1 whole Chicken (Consider cutting into quarters for quicker cooking.)
  • 1 cup Oil (Opt for vegetable or canola oil.)
  • 1 tablespoon Grated Ginger (Squeeze out ginger juice for better texture.)
  • 3 tablespoons Finely Chopped Spring Onion (White part only.)
  • 1/2 teaspoon Salt (Adjust to taste.)

Instructions

  1. In a large pot, fill with enough water to cover the whole chicken by about 5 centimeters. Bring to a rolling boil, then add the chicken pieces and boil for 5 minutes.
  2. Turn off the heat and cover the pot with a tight-fitting lid to let the chicken poach gently for 40 minutes.
  3. In a bowl, combine grated ginger, chopped spring onion, and salt. In a small pot, heat the oil over medium heat until it shimmers, then stir in the ginger mixture.
  4. Once cooled slightly, cut the chicken into serving pieces and drizzle with the ginger scallion sauce. Garnish with green onion tops.
