- 1 whole Chicken (Consider cutting into quarters for quicker cooking.)
- 1 cup Oil (Opt for vegetable or canola oil.)
- 1 tablespoon Grated Ginger (Squeeze out ginger juice for better texture.)
- 3 tablespoons Finely Chopped Spring Onion (White part only.)
- 1/2 teaspoon Salt (Adjust to taste.)
Instructions
- In a large pot, fill with enough water to cover the whole chicken by about 5 centimeters. Bring to a rolling boil, then add the chicken pieces and boil for 5 minutes.
- Turn off the heat and cover the pot with a tight-fitting lid to let the chicken poach gently for 40 minutes.
- In a bowl, combine grated ginger, chopped spring onion, and salt. In a small pot, heat the oil over medium heat until it shimmers, then stir in the ginger mixture.
- Once cooled slightly, cut the chicken into serving pieces and drizzle with the ginger scallion sauce. Garnish with green onion tops.
