Instructions

  1. Whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt in a medium bowl.
  2. Beat softened butter and brown sugar in a large bowl until light and fluffy.
  3. Add molasses, egg, and vanilla, beating until completely combined.
  4. Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms.
  5. Divide dough in half and wrap each portion in plastic wrap. Refrigerate for at least 2 hours or overnight.
  6. Preheat your oven to 350°F (175°C). Roll chilled dough on a floured surface to ¼-inch thickness.
  7. Use gingerbread man cutters to create cookie shapes, placing cookies on parchment-lined baking sheets.
  8. Bake for 8-10 minutes until edges are lightly golden. Cool on baking sheets for 5 minutes before transferring to wire racks.
